Groundnut oil, also known as peanut oil or arachis oil,is a vegetable oil derived from peanuts. The oil usually has mild or neutral flavor but if made with roasted peanuts it has a strong peanut flavor and aroma. It is often used in American, Chinese, Indian, African, and Southeast Asian Cuisine, both for general cooking, and in the case of roasted oil, for added flavor. Groundnut oil contains phytochemicals and vitamin E, both of which are natural antioxidants.
The major groundnut growing states are Gujarat, Andhra Pradesh, Tamil Nadu, Karnataka, Maharashtra and Rajasthan. Gujarat is the largest Producing state accounting for 40% of total groundnut produced in the country.
